Only a small amount of cholesterol is obtained from foods eaten. Most cholesterol is made by the body itself. The amount of cholesterol that the body makes, is related to the proportions of fatty acids that are consumed in the diet, and elevated cholesterol levels, which can lead to coronary heart disease, seem to be linked more to high intakes of saturated fatty acids. Probably the best way to avoid elevated cholesterol levels is to consume your food, within reason, in the percentage proportions that the DRVs specify ie. the Food Energy Balance. (see Food Energy Balance above) The intake of cholesterol is therefore shown only for information.
